齐鲁网·闪电新闻4月4日讯 青团俗称“青圆子”,唯清明前后才有,吃上它,就仿佛就抓住了春天的一角。

Green rice ball, also known as "green dumplings," is a seasonal delicacy only available around the Qingming Festival. Taking a bite is like capturing the scent of spring.

准备新鲜艾草,摘洗干净

Prepare some mugwort, wash and clean the mugwort thoroughly.

处理好的艾草中加入小苏打

Add some baking soda,

用热水将艾草烫熟,去除苦涩味

and blanch the mugwort in hot water to remove bitterness.

将艾草叶放入搅拌机中,加入适量水打成艾草泥

Blend the blanched mugwort leaves with some water in a blender until a smooth paste forms.

准备500g糯米粉、300g小麦淀粉

Prepare 500g of glutinous rice flour and 300g of wheat starch.

倒入盆中,再加入适量玉米油、白糖

Combine glutinous rice flour, wheat starch, corn oil, and sugar in a bowl. 

加入艾草汁,和成面团

Add the mugwort paste and knead into a dough.

在50g小麦淀粉中加入开水 混合在艾草面团中

Mix 50g of wheat starch with boiling water to make a paste.

取适量做好的艾草皮分成等量的小块

Take a small amount of mugwort dough and divide it into equal portions. 

在手中团成圆子

Roll it in your hand to make a ball one by one.

炒制好的红豆沙馅也团成圆子

Roll the pre-cooked red bean paste filling into balls.

按压艾草皮,在中间填满豆沙馅

Flatten a mugwort dough ball, place some red bean paste in the center, 

按压使艾草皮完全包裹住馅,搓成圆形

encase the filling completely and then knead it into a ball.

大火蒸制20分钟

Steam the balls over high heat for 20 minutes.

待其略微冷却后,刷层薄薄的油

Once they have cooled slightly, brush a thin layer of oil on the surface. 

青团外面油绿如玉,咬上一口糯韧绵软,里面裹着绵密细腻的清甜红豆沙更是点睛之笔。

The green rice balls,with their jade-green exteriors, offer a delightful textural experience.  Take one bite, you will discover a soft and chewy dough that perfectly complements the sweet and smooth red bean paste filling.
